This is one of Joanna’s favorite dips…
Ingredients
- 2 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon olive oil
- 3/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1 (15 ounce) can pumpkin puree
- 1 garlic clove, chopped
- 2 tablespoons chopped fresh parsley
Directions
Place all ingredients, with the exception of the parsley, in a food processor (or blender), and process until smooth. Add parsley and pulse until blended.
Spoon hummus into a really cute serving bowl and sprinkle with toasted pumpkin seeds, if desired.
Serve with veggies or pita chips.
